About The Pig Kahuna
Chef Dave Mallari began his culinary adventures as a boy in his parent’s busy kitchen. The Asian cuisine he studied and created during his early years taught him the distinct difference made by using only the freshest, most flavor-filled and seasonal ingredients. Building upon his Asian-centered dishes and technique, the self-taught chef further grew his culinary portfolio by including classic fare and technique from numerous other countries as well.

The Pig Kahuna uses a custom made, one-of-a-kind rotisserie pit called the “Oinkmaster”. This is an open air rotisserie style roaster which makes the pig the star of the show so that everyone can enjoy viewing it. The Oinkmaster employs a direct heat cooking style with only all natural charcoal that burns more steadily and evenly, while producing less soot (which can affect the flavor of the pig.) No propane is used for the pig ever! This style of cooking also makes the skin nice and crispy.
Knowing that it’s better to give than receive, The Pig Kahuna routinely participates in New England and Maine-based charity and community outreach projects. Chef Dave also participates in various vocational career days at local Maine schools.
About SeaLyon Farm
SeaLyon Farm is situated is beautifully situated amongst the rolling woods and fields of Alna just south of Head Tide and adjacent to the WW&F’s Top of Mountain station. Wagons (horse-drawn, when available) meet every arriving train to transport each group to the farm. When horses are present (all events, except the Pig Roast Farmstand Express) everyone will have the opportunity for an extended tour of the farm and countryside aboard a horse-drawn wagon while traversing to, from, or about the farm.
Depending on the weather and nature of the event, activities and vendors at SeaLyon Farm will likely include:
- Horse wagon rides from Mike & Ace of Woodfield Farm.
- Tasty food prepared on-site from select, local vendors.
- A selection of locally-produced adult beverages (beer and cider) from Six River Cider (subject to availability.)
- Jams, salsas, and lavender products and many other goodies from the SeaLyon Farm Store.
- Maple syrup and other treats from Marcoux Family Farm.
- Additional vendors from the Wiscasset Farmers Market and other local farms, artisans, and crafters.
- A bonfire to make s’mores over, held underneath a fire pit pavilion – perfect for inclement weather.
- Lawn games such as cornhole, checkers, Connect Four, and tic-tac-toe. Plus, during the fall, Pumpkin Bowling!
- Visits with the SeaLyon Farm goats: Pumpkin, Lavender, and Honey. Additional animals may be present too.
- Exploration of the farm grounds and scenic pond.
There will be an approximately 60-90 minute layover to enjoy the farm and other activities before the narrow gauge train returns you to Sheepscot station.
SeaLyon is a working farm that grows agricultural products and raises bees for honey. As such, those who do not enjoy the outdoors or appreciate farm animals, have severe mobility issues, or wish to wear clothing/footwear that is not suitable for outdoor activities may wish to consider a train ride or other event that does not include a visit to the farm. For their safety, and the safety of the farm animals, pets are not permitted at events held at SeaLyon Farm. Please make note of the weather forecast and dress accordingly. There is very limited shelter at the farm and the train itself is not heated (or air conditioned).
The WW&F Railway partners with SeaLyon Farm throughout the year on a variety of excursions including Steam & Sleighs, Eastertime Eggspress, Pig Roast Farmstand Express, Lavender Pickin’ Trains, and Pumpkin Pickin’ Trains. SeaLyon Farm also sponsors the Victorian Christmas Marketplace which takes place at the WW&F Pavilion at Alna Center each holiday season.
